Caviar is perishable — treat it like the fresh seafood it is.
The short version
Keep the tin sealed, cold, and on ice until you serve. After opening, press the lid back down, wrap it, and return it to the coldest shelf (the back, not the door). Eat opened caviar within a couple of days for the best texture and flavour.

Can you freeze caviar?
Don't freeze true sturgeon caviar — freezing bursts the delicate pearls and turns the texture mushy. Keep it cold (0–4°C) instead and eat it fresh.
How long does caviar last once opened?
Once opened, cover the tin tightly and eat the caviar within 2–3 days, kept in the coldest part of the fridge.
