The Amur sturgeon (Acipenser schrenckii) — sometimes called the Japanese or Schrenck sturgeon — is prized for clean, balanced roe with a glossy sheen and a gentle, buttery finish. It’s one of the two parent species behind Kaluga Hybrid caviar, and on its own it makes a vibrant, food-friendly tin: bright, clean and beautifully balanced. Lovely on eggs, blini, or straight off a non-metal spoon.
